Tasty Eats - Sausage, Peppers and Onions "Stoup"

My husband first saw this on Rachael Ray a couple years ago and ever since its been a staple in our house.
Served with an oven-warmed Hawaiian Roll.

Ingredients:
-1 to 2 tablspoons of olive oil (EVOO)

-Italian sausage --> we use a whole package of Hillshire Farm's and take the 'skin' off
-1 tablespoon of Balsamic vinegar
-1 can of diced tomatoes, drained
-1 whole onion, chopped (I prefer red onions)
-1/2 green pepper, chopped
-1/2 yellow pepper, chopped
-1/2 red pepper, chopped
-1 tsp of minced garlic
-2 cups of chicken broth (bouillon cubes work too)
-Italian Five Cheese blend (shredded)

*Its a very fast meal which also keeps it at 'favorite' status in our house, but we've made our own modifications that feeds us for 2, sometimes 3 days.

Directions:
Cook the italian sausage in a large pot with the olive oil. Once the sausage is cooked through. Add the onion chunks, stir and let them cook for a few minutes. Then add the peppers and garlic. Once all the peppers and onion chunks seem to have cooked with the sausage for a few minutes, add a the balsamic vinegar to deglaze the bottom of the pot. Next, stir in the tomatoes and the chicken stock. Let simmer together for about 5 mins and then serve over rice. Lastly, add the cheese on top and voila!
