Served with an oven-warmed Hawaiian Roll. |
Ingredients:
-1 to 2 tablspoons of olive oil (EVOO)
-Italian sausage --> we use a whole package of Hillshire Farm's and take the 'skin' off
-1 tablespoon of Balsamic vinegar
-1 can of diced tomatoes, drained
-1 whole onion, chopped (I prefer red onions)
-1/2 green pepper, chopped
-1/2 yellow pepper, chopped
-1/2 red pepper, chopped
-1 tsp of minced garlic
-2 cups of chicken broth (bouillon cubes work too)
-Italian Five Cheese blend (shredded)
*Its a very fast meal which also keeps it at 'favorite' status in our house, but we've made our own modifications that feeds us for 2, sometimes 3 days.
To see the actual recipe, go here. We also cook our rice in our rice cooker while the stoup is cooking.
Directions:
Cook the italian sausage in a large pot with the olive oil. Once the sausage is cooked through. Add the onion chunks, stir and let them cook for a few minutes. Then add the peppers and garlic. Once all the peppers and onion chunks seem to have cooked with the sausage for a few minutes, add a the balsamic vinegar to deglaze the bottom of the pot. Next, stir in the tomatoes and the chicken stock. Let simmer together for about 5 mins and then serve over rice. Lastly, add the cheese on top and voila!
I hope you try it......and let me know how it is when you do!
I am going to try it very soon. I need more recipes, sometimes I feel like I am cooking the same boring recipe.
